Easy Weeknight Meal
Italian Herbs & Prosciutto, Please!
This is an easy weeknight meal that refrigerates well and is just as delicious for leftovers the next night. Take chicken thighs and brush them with olive oil and season with salt, pepper and Italian herbs. I like to leave the skin on and bone in for maximum flavor. Roast them until no longer pink. Take fresh asparagus and boil 2 to 3 minutes to soften and then remove them and place them in an ice bath to preserve the green color. Wrap the asparagus carefully with prosciutto and top with an Italian cheese blend. Bake until cheese has melted and prosciutto is slightly crispy. It looks fancy and is fast to make.
You could modify the recipe and use regular bacon if you are not a fan of prosciutto. I absolutely adore fresh asparagus. It's a good source of antioxidants and helps promote healthy digestion.
